Travel from Israel to Cairo

Hi,
I will be traveling from Jeruselem to Rafah on the Via Maris continuing across the Suez Canal to Ismailia taking the desert route to Cairo.
What type of roads will I be traveling on?
I am especially interested in the desert route to Cairo and the Via Maris. Any info would be appreciated.
Also proper dress for women and the proper words/phrases for "please" and "thank you". Any books that you might recommend as especially good reading would also be appreciated.
