If you are specifically looking for a lodge safari - then you should definitely book in advance. Many of the lodges are already booked up for Auly - Aug 05 - it is peak season due to school holidays.
Camping safari you may be able to find when you are there. However, you need to be very careful as there are so many safari touts on the streets of Arusha, many of them are not registered companies.
Days trips: there is not that much to see just around Arusha in a day trip. The Ngorongoro Crater, Lake Manyara Nat Park and Serengeti Nat Park are a fair drive away
