Am looking for a recipe for a deep-fried pastry served in Botswana and Zimbabwe called simply
"fat rolls" Can anyone help me? Many thanks!

240g flour
10ml teaspoon baking powder
15ml sugar
2ml salt
2 beaten eggs
125ml water or milk
Fat or subflower oil for frying

Sieve the flower & baking powder together and add the sugar. Mix the beaten eggs & water (or milk), then gradually add this mixture to the dry ingredients. The batter should be fairly stiff.
Heat enough fat or oil for shallow - or deep frying until it is hot but not smoking. Dip a teaspoon into the hot fat or oil and then use it to drop spoonsfulls of the batter into the frying pan. Fry until the cakes brown on all sides.
Allow the cakes to drain well on a wire rack over a bowl.

Serve with jam honey or mince (for supper)
