Dec in Egypt

Hi folks
I am a family man here in South Africa and have never been to Egypt. My wife and I with my 7yr old son are planning to fly there on Dec 22 for a 2 week holiday.
We would preferably like to rough it just that little bit to make this visit an adventurous one, so no 5 star hotels etc.
Can anyone recommend a good way to go about this or maybe a company that offers a not to expensive alternative.
I would also like to know if this is a good time of year to visit

December is a good month to visit Egypt - it's warm but not too hot.
